Tempering chocolate is a process that uses temperature to add strength, shine and a smooth melting feel to quality chocolate. We temper all our chocolate which is one reason you can taste the difference from ordinary compound chocolate that is common in mass-produced sweets. By starting with the best quality chocolate and then tempering it, we arrive at a uniquely delicious base to create a world of chocolate confections.
We blend homemade English toffee with our tempered chocolate. The local recipe dates to 1919 and makes our Chocolate Pizza unique. The toffee adds both taste and crunch to our Chocolate Pizza and making it on-site in small batches means it’s always fresh and the best-tasting. A few of our Chocolate Pizzas are made without the toffee but the majority contain this signature ingredient. Walk into our store when the kitchen is making toffee and the sweet aroma is divine.
Boiling and bubbling away, the toffee has to hit exactly the right temperature before it is poured out on baking sheets and cooled. It then goes to the food processor where it is ground fine and then on it goes to blended with the melted chocolate. We ladle that mixture into pizza pans and add an array of toppings including candies or nuts.

Remember, chocolate melts quickly above 75 degrees so avoid over-handling the product or exposing it to direct sunlight or a warm environment. Once your Chocolate Pizza arrives, store it out of direct sunlight and in a cool, room temperature location between 55-70 degrees (F). It doesn’t need to be refrigerated or frozen and will stay fresh for months at room temperature.
